THE EXPERIENCE

Fermentation and short skin maceration of Golden Russet and Rubinette. Second 8-week maceration on Château de Cartes grape skin. Aged on lees for a few months to intensify the aromatic complexity of this cider tasting like a light red wine.

COMPOSITION

50% Golden Russet macerated on Frontenac gris and Ste-Croix skin
50% Rubinette macerated on Vidal skin
