We leave the McIntosh stay on the skin for a few hours. We leave our Cortland apples outside to make them hyper concentrated and filled with sugar and aromas, followed by weeks of aging on Maréchal foch skin. Then we blend all three juices to let them ferment together. The result in the glass is a cider filled with red fruits with a pinch of funk!
