The Cortland apples used to make this cuvée underwent several weeks of passerillage, with the aim of amplifying aromas and structure on the palate. Cortland juice was then blended in vats with Sabrevois grape skins and 10% juice from the Château de Cartes vineyard. After 4 weeks' maceration, 5% Dolgo crabapple was added to complete the final blend, providing a "kick" of acidity.
